The rainy & windy weather this afternoon put my in the mood for some hot chocolate! ☕️

Melted 2 blocks in milk in the microwave.

Butter Roasted Chicken Pieces & Pumpkin Salad

A nice easy meal for a Friday night.

Melted some butter and coated chicken pieces in it, then salt and pepper & parsley.

Sprinkled Olive Oil & salt & pepper over the pumpkin.

Both go into the oven at 180 for 45 minutes.

Served with organic baby lettuce & Herb salad with cucumber & feta and some crushed nuts using a mortar & pestle. I love to drizzle light olive oil & balsamic vinegar over my salads and then chop it all up together.

Chicken Stir-fry!

Easy to make and a great way to get more vegetables into your day!
1. Add olive oil & chopped red/brown onion to a wok.
2. Crush 2 garlic cloves and add to the onion (be careful not to burn the garlic).
3. Add chicken breast strips and season with Tamari (Gluten free soy sauce). Cook until golden brown around the edges.
4. Add your chopped Veg: cabbage and spinach form a good base, pineapple, baby corn & red/yellow bell peppers add sweetness, carrots & snap peas add crunch & colour! You can add pretty much anything!
5. Serve on its own or with a side of rice

Tasty Treat – Bunless Burger withSweet Potato & Zucchini oven fries

It’s not quite as healthy as a salad, but is still a healthier version of a burger and chips!

Ingredients:

  • Fresh beef burger patties from your favourite butcher/supermarket
  • Brown Onion
  • Sweet Potato
  • Zucchini
  • Olive Oil
  • Salt & Pepper
  • Paprika
  • Parmesan
  • Avocado or Guacamole (Woolworths make a really good one that lasts a few days)
  • Grated Cheese for topping

Get Cooking:

  • Turn oven on to 180 degrees
  • Sweet potatoes:
    • Chop into chip-like shapes
    • Place chips into a bowl, drizzle with olive oil & season with salt & pepper and mix in the bowl until all chips are coated evenly
    • Spay 2 baking trays with spray & cook and spread sweet potato chips out on the one tray. Pop into the oven for 15 minutes. The sweet potato takes longer than the Zucchini so they need to go in first.
  • Zucchini:
    • Chop into chip-like shapes
    • Place chips into a bowl, drizzle with olive oil & season with pepper & paprkia and mix in the bowl until all chips are coated evenly (I didn’t add salt because the Parmesan is quite salty)
    • Spread Zucchini chips out on the one tray and top with a bit of Parmesan. Pop into the oven after the sweet potatoes have been in for 15 minutes. Set timer to another 15 minutes.
  • Onion & Burgers:
    • In a pan, fry the onion and the burger patties
    • Top burger patties with onion, cheese & guacamole
